Vegan, Blueberry, and Lemon Cupcakes — They are Simply Fresh and Zingy Delicious!

These cupcakes are so moist and good they won’t last long!

Ingredients:

  • 3 cups flour
  • 2t baking powder
  • 1t baking soda
  • 1/2 stick vegan butter
  • 3 T olive oil
  • 1/2 cup non dairy yogurt
  • 1/2 brown sugar
  • 1/2 cup white sugar
  • 1 cup almond milk
  • Zest and juice of one lemon 🍋
  • Splash of vanilla
  • 1 1/3 cup frozen blueberries 🫐

Mix all together

Then add blueberries

Bake @ 350 for 15–20 q minutes

Makes 18 cupcakes 🧁

Let cool

Frosting:

  • 1/2 stick vegan butter
  • 1 cup powdered sugar
  • 1/2 cup non dairy heavy whipping cream
